You are Director, New Products Marketing for KFC.  Your company has just rolled out its new Oven Roasted Chicken product to 1,500 company-owned stores in the U.S.  Before releasing this product to your U.S. franchisees (who own about 4,500 KFC stores), you need to make sure that the preparation procedures are simple enough that minimum wage workers can follow them.  One issue that concerns you most is that the chicken be cooked well enough to kill all potential disease-causing bacteria.  This requires that the chicken be served with an interior product temperature of at least 180 degrees Fahrenheit.  Product Development assures you that these procedures will do the trick, but you want to test them before releasing them (and introducing the Oven Roasted chicken product) to all of your U.S. franchisees.
