Using the extra shortening mixture from each version of the formula, measure density (weight per volume) of mixture from each batch. To measure density:

• Carefully spoon sample of shortening mixture into tared measuring cup.

• Visually check cup to confi rm that no large air gaps are present.

• Level the top of the cup with a straight-edge.

• Weigh the amount of creamed mixture in each cup and record results in Results Table 1.
