The European Food Safety Authority recently issued a scientific opinion on the public health risks related to mechanically separated meat (MSM). The analysis suggested that calcium could be used to distinguish between MSM and non-MSM products.23 A random sample of MSM poultry was obtained and the deboner head pressure (x, lb/in2 ) and the amount of calcium (y, ppm) was measured for each.
