A chain of well-known Cafés in Sydney and Melbourne has decided to open a smaller version of their larger shops in Canberra. The name of the Café is
Aroma.


The café in Canberra will be based in Manuka.


The Melbourne and Sydney Cafés have an attached-on site industrial bakery that produces all of their bread, pastries, pies and cakes on site. In Canberra the company’s bakery is based in Fyshwick and does not have a café attached to it. The bakery in Fyshwick operates from 0200 (2am) through to 0900 (9am) daily – 7 days a week


The café in Manuka will operate from 0700 (7am) -1600 (4pm) – 7 days a week.


This version will NOT have the bakery on site; however, this café will be receiving all of their required bakery products from their own bakery based in Fyshwick (run by the same company – but at a different location).


You have
3 staff members
to assist you throughout the project.



You are to allocate their roles and names in the assessment.



ALLOCATED BUDGET TO COMPLETION AND HANDOVER: $75000.00 (AUD)



Aroma Café Details:


The basic details of the Manuka Aroma café are:


· Will be set up for 16 tables and chairs of up to 4 patrons each


· The café will be located inside a Marketplace


· It will have an underground carpark with small cage storage unit


· Will have a long counter with display units of all the baked goods


· Bread racks will be located behind the counter with a bread slicer nearby


· A large, specialised coffee machine will be to the right of the display units


· The space between the two will be the area that orders are placed


· There is a utility room behind the counter with an additional storage– both refrigerated and cupboard.


· A small space will be allocated for staff in this area as well.


A Café Manager has been appointed; His name is David.


He is recruiting the remaining staff required for opening.

Delightful Aroma Café in the heart of Manuka
Background/Context:
Aroma store will be inaugurated in Manuka, Canberra. The store will get supply of bakery products from its own bakery which is situated in Fyshwick. The new store will be conducting its business operations from 7AM in the morning till 4PM and will not have any on-site bakery for supply of
the bakery products. It will also serve the coffee lovers who will visit the store in the morning and the afternoon session in Canberra. There will be around 16 tables along with chairs of upto 4 patrons each will be established in the Café. The café will serve approximately 64 customers at a time with delight. The best place selected for edifying the café in Manuka is inside the Manuka market. The market is large and have provision to park cars in the underground. The facility also has small cage storage units.
Below are the Work, Health and Safety policies which needs to be followed by the Aroma:
1. Food and Safety Act, 1991 (FSANZ): This act helps to develop as well as administer the standards of the food quality. Its ultimate aim is to protect the people of Australia as well as New Zealand by delivering a safe food.
2. Work Health and Safety Act, 2011: This act provides certain policies and regulations which needs to be adhered by the café for protecting and ensuring safety of the employees from various risks. Further, this act will safeguard the rights of customers, vendors as well as the visitors in the café shop.
3. Food Premises and Equipment Act: According to this act, the restaurants and cafés in Australia needs to ensure that there is sufficient safety with respect to the food, furniture and fixtures, transport. All these possessions must be designed and constructed properly as well as sanitized well especially during the covid-19 pandemic situation. Further, the act also prescribes certain guidelines which ensures to minimize the food contamination by proper designing of the premises in which the restaurant or café operates.
Objective:
The ultimate aim of Aroma café is to provide a high-quality service to the customers, especially the cake and coffee lovers visiting their store in Manuka. Quality is defined as the fitness to use a product or service and it is the extent to which the product is able to satisfy the customers wants efficiently (Beverly et al., 2002). Further, the company wants to serve the bakery products and help them taste their delicious coffee at lower price compared to the price charged by other cafes in Manuka. This will help them to target and acquire the maximum number of customers in Manuka and throughout Australia. This will help to maximize the market share of the company as well as enhance the profitability. This will help the café to enhance its brand name along with marking its presence in the international locations globally. This will eventually assist the Aroma brand to become renowned universally and compete with some of the international café brands like Starbucks and Café Coffee Day.
Target Outcomes:
The target outcomes which are expected to be achieved by Aroma are as follows:
1. Expansion of the Aroma brand by becoming renowned in Manuka and throughout Australia.
2. Serve the cake lovers in the city of Manuka with delicious variety of cake, pastries along with wonderful pies. Also, provide a coffee shop within the cake shop which will provide 4 delicious flavours of coffee to the customers.
3. The company must make their presence throughout Australia and enhance their brand name. This will eventually help them to compete with the international café brands. Thus, enhanced customer service can help in enhancing the quality of the products, competitive advantage over other brands, generate more sales and revenue and increase the lucrative prospects (Goofin and Price; 1996).
4. The café company must target the corporate clients also along with the international visitors coming for touring in Australia. This is because each time a customer will purchase a product, he advances through a buying cycle (Griffin, 2002).
5. Participate in big events and ceremonies like seminars, cricket competitions, birthday and marriage ceremonies etc.
