The name of the Café is CupNBake. The café in Canberra will be based in Manuka. The Melbourne and Sydney Café’s have an attached-on site industrial bakery that produces all of their bread, pastries, pies and cakes on site. In Canberra the company’s bakery is based in Fyshwick and does not have a café attached to it. The bakery in Fyshwick operates from 0200 (2am) through to 0900 (9am) daily – 7 days a week The café in Manuka will operate from 0700 (7am) -1600 (4pm) – 7 days a week. This version will NOT have the bakery on site, however this café will be receiving all of their required bakery products from their own bakery based in Fyshwick (run by the same company – but at a different location). You have 3 staff members to assist you throughout the project. You are to allocate their roles and names in the assessment. ALLOCATED BUDGET TO COMPLETION AND HANDOVER: $75000.00 (AU) CupNBake Café Details: The basic details of the Manuka CupNBake café are: · Will be set up for 16 tables and chairs of up to 4 patrons each · The café will be located inside a Marketplace · It will have an underground carpark with small cage storage unit · Will have a long counter with display units of all the baked goods · Bread racks will be located behind the counter with a bread slicer near by · A large, specialised coffee machine will be to the right of the display units · The space between the two will be the area that orders are placed · There is a utility room behind the counter with an additional storage– both refrigerated and cupboard. · A small space will be allocated for staff in this area as well. A Café Manager has been appointed; his name is David. He is recruiting the remaining staff required for opening. Background/Context:
There will be a branch of cafe opened by CupNBake in Manuka
, Canberra which will not have any on site bakery but will receive the bakery products from its owned bakery located in Fyshwick. The newly set-up cafe will be operating from 7AM to 4PM and will be opened for 7 days a week. It will generally serve the morning and afternoon coffee lovers of Canberra. It will be a 16 table and 4 patrons chaired cafe serving a maximum of 64 customers at any point of time. The cafe will be located inside the Manuka marketplace and will have underground car parking facilities with small cage storage unit.
The below WHS regulations will be adhered by the cafe which is as follows:
1. Food and Safety Act, 1991 (FSANZ) which governs the safety of the foods as per the standards prescribed in the Act.
2. Work health and Safety Act, 2011 provides a framework to protect the workers who works under the cafe and are exposed to various risks. This also includes the safety of customers, suppliers as well as the visitors in relation to the company.
3. Food Premises and Equipment Act in Australia states that the restaurant must adhere and ensures that the food premises, fittings and fixtures, equipment and transport vehicles are designed and constructed properly and are sanitized. Also, the layout of the premises must be done in such a manner that it minimised the opportunities to food contamination.
Objective:
The aim of the project is to delivery efficient cafe and bakery services to the coffee and food lovers in Canberra, Manuka. They also want to aim at offering the customers with lower than the market price products and services and maximize their sales and profitability throughout Australia. They also want to expand their cafe business throughout Australia and even in international locations. This will ultimately enable them to compete with international brands like Cafe Coffee Day and Starbucks in the future.
Target Outcomes:
The key outcomes that the project intends to achieve are as follows:
1. Expansion in the city of Canberra by opening its café in Manuka.
2. Deliver the food lovers of Canberra with cake, pastries and pies along with a coffee shop with various flavors and tastes of coffee.
3. Make their presence felt throughout Australia and compete with international players in niche segments
4. Targeting the corporate clients as well as the local coffee and cake lovers for its products.
5. Become recognized in various big events like birthday celebrations, marriage anniversaries etc.
