“The entrepreneurial cook
A semi-retired school cook has always made excellent chocolate mousse at home. She makes it from real chocolate, fresh eggs, and double cream. She never uses a recipe, for it does not take much effort - all she does is simply melt the chocolate in a saucepan over a low heat and stir in the beaten eggs and cream, and mix it all carefully. Then she pours it into little pots and lets it set. She has always had a great success with this when she has made it for parties at home. But now, no longer working at the school, she has had the great idea of going into business. She is going to make chocolate mousses for some of the local restaurants. She reckons she can get a tray of product into the boot of her car, and she could easily deliver once a week here and there, and if things go well she could expand making strawberry desserts, apricot ones, some she could decorate with cream. . . her imagination is fired and she will have a wonderful productive, profitable time. . .”
