Consider a jet of highly filtered dry air at - 73°C flowing over a piece of porcine liver (approximated as a sphere) at 15 mis. We would like to compute the freezing time for this sphere. The diameter of the sphere is 3 cm. The liver has been soaked in glycerol and a phosphate buffer to aid freezing and it has already been cooled down to the freezing temperature of -31 °C.
